Honeycrisp actually work great for pies. I read something where someone made a bunch of pies with different apples like Kenji would (it might have actually been Kenji), and honeycrisp came out on top. That’s what my wife uses now and they turn out great.
Will give them a try. I follow his parboiling advice on the apples. IIRC he used Golden Delicious in that video. Ofc Granny Smith are cheaper and I like their tartness.

The crisp varietals don’t seem to grow real well in NY, but the ochards keep growing more of them per demand. Honeycrisps are reliably among the worst apples at the farmers market, but cost 50% more and sell out first. The best ones here are something called Stamen Winesap which I just discovered last year.
IME banks will often allow charges for regular deductions without updating the card #. Of course you can just call them up and cancel. Don’t imagine that Apple is going to make a claim against this guys moms estate for 99 cents but who knows.
Makes no sense to me. Just cancel the credit card or bank account.
It’s not always that easy. Banks and credit cards will continue paying out under the old number for a while. And then come after you for the balance. Their stated position is you should never cancel an account just to get out of a recurring charge.
In practice I imagine they reject the charges eventually and just eat the charges if they aren’t big and they believe that the person really died.
Looks like another huge cheating scandal in poker.
