My local grocery store is very light on vegan cheese, they just have mozzarella and cheddar substitutes.
I usually don’t mess with vegan cheese, but the Parm was on sale. It was good

17 hours of reducing resulted in the best veal stock I have ever made. Today French onion soup from it.

Ya. My oven was busy with the final batch of left over nuts and bolts from the holidays so I had to use toaster oven.

What is that?
Potatoes, poblanos, onion, bacon, black beans, eggs, and cheddar cheese. All sautéed up in a pan.
