not sure what we disagree on, that business certainly prioritizes not talking about it and definitely not revealing clients. If people come out–I hope they have a plan B for a career choice.
Trump NDAs are unenforceable usually because they concern government service. These NDA would be unenforceable due to illegal conduct (which would of course cover many Trump NDAs).
Hell, in the real world Trump’s own lawyer testified against him.

Are we talking about what happens to people who have enough money to defend themselves when they test an NDA violation or people who don’t?
Okay what about this: the escort asks, publicly, for his “alleged” client (LG) to release him from the NDA. “Alleged” client (LG) responds, publicly, “IDK who this guy is or wtf he’s talking about!” Is there still an NDA?

NDAs and just letters from lawyers work regardless of whether they are enforceable because they scare people who can’t afford to hire lawyers.
As long as the prostitutes have access to a competent legal team, they won’t have to worry about these shady NDAs.

Poor people catch all the breaks.
That’s another thing about trying to enforce NDAs after info is released. Everything becomes public and Streisand effect.
