Lao gan ma may be the most used condiment on earth. It’s only about $3 usd in Azn shops here but something like $6 usd on Amazon?! so I could see some people never having tried it. I bought three jars when this all started (the cashiers all had masks but nobody else in Canada was wearing them yet) foolishly thinking it’d be over soon but they’re long gone.
I predict within a year or two it will surpass Sriracha in terms of cult following going mainstream. They’ve already attended New York Fashion Week (no joke) and are trying to brand that lady’s face as the new image of hot sauce.
Lunches lately. Everything bagel - turkey - cheese - Calabrian Peppers - mustard - pickled red onion - pickles.

How much different is it from this stuff?
Considerably different.
I tried to console myself for running out of chili crisp by remembering I had sambal oelek. It didn’t work. Oelek is great but very fresh, sour, vinegar, almost salsa vibe. Chili crisp is more of an umami, salty, vaguely sweet, thing. If you leave your oelek out on the counter and it gets that dark rotten funk you’re starting to get closer to crisp.
I like the lao gan ma with peanuts the most. Honestly they’re all fantastic and easy shortcuts. They remind me of Indian/Nepali fish pickles where even a tiny amount can flavor a big bowl of rice.
I really like them both, tbh. I prefer sambal oelek for asian soups, since it seems to integrate a little better.

Need some inspiration for a meatless dish to make this weekend, gonna do burgers tomorrow but struggling to come up with a good veg dish that will yield leftovers - fish would be fine, I suppose. My wife shot down my original plan for Cuban inspired black beans and rice. Maybe a curry (Thai inspired or similar) with some tofu or white fish?
Would help to have some parameters because that’s just a wide universe. Are you looking for something you’ve never made that your wife will eat? Given no guidance, my instinct is to suggest something like confit byaldi.

I’m being fancy. It’s the key dish in the movie Ratatouille, which is not actually ratatouille. I suggested it because summer squashes were on sale at my local grocery. I have a tendency to build meal plans around what is on sale.
hard to go wrong with Indian food for vegetarian, if you have the right spices laying around. If not, even my local Albertsons up here in trumpland carries garam masala in the spice aisle.

This is one of my favorite vegan recipes. Can add tofu for protein.

Sautee some shallots, add some thyme, salt, pepper, white wine and simmer a minute. Add lentils, water or stock, broken spaghetti, Swiss chard. Serve with grated pecorino or parmesan and balsamic vinegar.
Simple fish one is layer thinly sliced potato, onion, tomato, and fish (tilapia, snapper, whatever). Olive oil, salt pepper oregano and lemon juice over the fish layers. cover and bake it. Parboil the potatoes though.

I really like a good veg lasagna. They key is to cook every vote of water out of the veggies that you can before baking, in my experience what hurts veg lasagna is that it can’t be watery.
