Cooking Good Food - Ramens of the day

I’m super jealous

Hard for anything with the main ingredients being pasta and cheese to turn out bad.

I’d eat it.

This seems a lot harder than poaching an egg. Why not just boil water, add egg, remove from water?

Here too. A few options to stretch it out. All require more time.

Use less yeast. Bread will take longer to rise but thats all.
Poolish starter. Put a little yeast in 50/50 flour/water (by weight) the night before, use that instead.
Sourdough. 50/50 flour/water (rye is best but any unbleached will do), dump half then feed with same amount of 50/50 flour/water every day. 5-7 days you’re in business.

We’re going to do flatbread pizzas and save the yeast for bread.

I might also try cultivating a sourdough starter with your method. I kept one going for a couple of years in this house, so maybe I have some good yeast spores still floating around.

People are posting on Nextdoor asking for yeast, who’d have thought that shit would be such a commodity :man_shrugging:

I tried to make my shashuka more saucy as per Yuv’s suggestion and I added some seranno peppers for an extra kick. This is excellent comfort food; it’s probably going to be a regular weekday meal for me. I just wish I had okay pita to serve it with. Why is bread so terrible in America? In my lifetime, this nation’s beer and coffee game has advanced leaps and bounds in its sophistication, but our bread game is pure garbage. I remember as an undergrad I had German housemates who were shocked at how horrifying our bread is, and nothing has gotten any better afaict.

Join the Bread Bros and make your own? Doesn’t sound too bad if you have a mixer:

Also, I’m not surprised that it was German folks who were most horrified at our bread. I’ve been to a fair bit of Europe now, and German bakeries are elite. The French ain’t got nothin’ on them.

Looks awesome. If you have any Indian places doing takeout, garlic naan might be really good with that.

All the Unstuck wives right now:

But yeah, we have so many German immigrants in the Midwest and they brought their excellent beer-making knowledge but our bread sucks ass for some reason.

I went out with a lady from Ireland a few times and asked her what she missed the most. Bread and chocolate. She told me that Hershey’s tastes like vomit and now I always smell puke whenever I’m near the stuff.

In other news

Shanghai style red cooked pork belly, along with some store bought xiao lung bao and garlic stir fry asparagus and baby bok choy.

That roast chicken recipe is awful. BA is for kids. Cook chicken hot and fast not for the 2-3 hours (!!!) that recipe says. 500+ degrees. Salt it early and leave it uncovered for a day in advance(she mentions it and then… doesn’t do it).

We bought a wok for Christmas and have been trying various Chinese stuff at home… Sesame chicken was pretty spot on.
