Cooking Good Food - Ramens of the day

Yeah, between beans, rice, stock, chicken pho, and chili verde, our Instant Pot is worth its cost and bulk.

You have a recipe for the chicken pho instantpot?

Not quite as good as homemade beef pho, but maybe 80% as good for less than 10% of the effort.

I’m not going to say that Chang is wrong, but it’s probably good to remember that

(A) a new instapot can be acquired for about $50

And

(B) Chang owns one of these, which runs over a grand…

I cannot argue with pho of any sort

Most of the critical reviews of air fryers I’ve seen say you can get almost the exact same results with a toaster oven.

Hard to do rib roasts in a toaster. Eddie Chang is wrong so what.

Even harder to fit one in an air fryer, I’d imagine.

I can’t because it’s hard to argue with something you’re never in the same room with.

Generalization, but no.

Air fryers are small convection ovens on :100: - intensely moving air, usually circulating in a deliberate way, in a small cavity. Most toaster ovens do not circulate air aka do not have convection.

Air fryers emulate deep fried results in that crispy textures are quickly developed on the surface area of foods, creating visual indicators of “deep fried”.

Really just a bunch of MALARKEY as this result is most obvious on frozen prepared foods that are already flash fried before freezing and covered in easy crisp-able breading. With that said, air fried veggies are goat.

Air fryers like to make claims about capacity, which imo is bullshit. All wall appliances are limited to 1800w (in US) so generally speaking more capacity = less power intensity. In other words, it’s more difficult to retain energy in a larger capacity product - although 4qt or 5qt air fryers “cook less food” they tend to produce best in class results as they concentrate energy better than a 10qt LOL America Bigger Is Better air fryer.

If I had the counter space, I would get an air fryer or combo convection oven thing. I bake falafel (occasionally deep fry it but it’s a mess) and would love to try it in an air fryer.

People need to buy better toaster ovens imo. Mine has convection.

Air fryers work amazing okay stop with this heresy.

I just ate the hottest thing I’ve ever had. “Dragon Shrimp”. It’s the tastiest pain I’ve ever felt. Ive been hiccuping on the toilet for 25 minutes

Can I duplicate air fryer results in a really sick convection oven? Not a countertop model, but a built in wall oven.

So here’s the deal: you don’t need one of these things. They’re loud, even the big ones have a surprisingly small capacity, they don’t do anything significantly better than an oven and you probably have an oven anyway. They’d also require bumping your toaster and coffeemaker onto a storage shelf.

Instead, if you’re into the air-frying idea, save the potentially significant amount of money you’d spend on one (high-end models can cost $400 or more) and upgrade to a convection feature the next time your real oven croaks.

Probably not. Air fryers have all that intensity in a small cooking environment. Your wall oven is big af. Generally, that’s the difference.

Wishy washy answer but there are a couple of variables at play.

One of the convection wall ovens is a steam oven (but you can use it without steam) and is smaller than the other one, which is indeed yuuge.

How hot do these counter top air fryers get. I assume the wall oven can get hotter. Would that not compensate for the larger volume?

Its Abomination Or Genius time.

Made steak for dinner last night and had some leftover chimichurri sauce. So I decided to put the chimichurri in burritos this morning. I’m getting some Larry David prettay, prettay, prettay good vibes. Will do again.
