Looks good but the prefect steak should never have grill marks. All grill marks mean is that you only have thin lines of Maillard reaction which is the name for the browning that gives steak so much flavour. You want to use cast iron to the whole thing is deeply browned.

A guy gifted me a couple of jars of fresh tuna caught off the coast of Washington. This is supposed to be leaps and bounds better than canned tuna. He says the jalapeno one has a hint of spice but not much.

So, anybody have any suggestions on what to make with it?

I doubt many people have much experience with high grade canned tuna. What do you like to do with canned tuna? What do you like to do with fresh?

Canned tuna pretty much only goes into making tuna salad for sandwiches or “nonbread” sandwiches. Fresh tuna generally gets turned into sushi or seared with a teryaki/garlic glaze…

How 'bout a nice nicoise salad?

Looks good. Recipe is a little messed up though. Potatoes in the pictures and the instructions, but not in the ingredient list… Not a big deal though…

I’d roughly cube it/chunk it and add a little mayo and lemon and hot pepper like a thinly sliced jalapeno. Then I’d debate whether to go in the direction of fancy potato salad (chives, maybe caviar) or do a fancy buttery tuna roll thing.

Dress the potatoes with the vinaigrette while they’re still hot. Should be about 2:1 beans to potatoes. Nevermind the cucumbers. Add anchovies and cherry tomatoes. I like a very mustardy balsamic vinaigrette for this one, with some shallot in it. Seriously, a nicoise is the best use of good tuna already cooked if the weather is warm.

Baked Sicilian stuffed eggplant with tomato, olives, anchovies, and capers. Turned out kinda meh, but still tasty.

Gah, my parents are always giving me kitschy Maryland shit for Christmas.

It’s all good. I have Christmas tree ornaments made of crab shells and put Old Bay in my scrambled eggs, so I’m not judging anyone :)
