The sauce on the outside is breaking my brain!
Yeah I forgot to put it in the tacos while cooking. These ones are fried crisp and folded over in the pan, so they are a bit more like quesadillas in a way.
Looks delicious, but also looks a whole lot like channa masala which is also delicious and easy to make, so you should try that too. Kenji’s recipe is fantastic.
I’ll have to make that my next weekend project.
I’m really missing Indian food during this. I can make naan well but my curry always fails. I should really just pay for some tandoori chicken delivery.
Have you tried Patak’s curry paste? I make shrimp/chicken curry a lot with it. I have no idea how you make homeade naan.
I have a bunch of Indian neighbors and it smells really good in my neighborhood when they’re cooking. I used to make a decent butter chicken and eggplant bharta, but the flavor has been off the last few times on the butter chicken. The only thing that changed was the brand of garam masala that I used, so I assume I just need to find a good one.
I learned the naan from someone on 2p2. It turns out alright if you have a oven that get hot af and a pizza stone. I have not tried that paste.
This naan has come out pretty well for me:
The 2p2 recipe (supposedly from an Indian dude iirc) called for Greek Yogurt and that’s what I always used. His chicken curry recipe never turned out quite the same as 2 different Indian restaurants I delivered for years ago though. The owners of these restaurants were Indian immigrants. Reminiscing about my first Indian experience now. I got a fuck up Lamb Rogan Josh and naan order and the restaurant saying to just keep it. The naan lured me in because I used to just eat bread and butter like a midwest kid but the curry taste kept me curious and started to love it. I love tacos but Indian might be a close second. I’m high af right now.
ETA: I’ve been listening to I Don’t Even Own a Television based on recommendations here and while it’s good, I’m now even more self conscious about my writing.
The biggest difference between Greek and conventional yogurt is water content. Greek has less. I’d expect that if you used Greek but also added water or milk to end up with a comparably sticky dough compared to the above, you’d be hard pressed to tell the difference.
On the topic of curry, this Thai curry paste is absolutely amazing. Thai curry with butternut squash and chickpeas is my favorite comfort meal at the moment.
You got a recipe for this? I have a can of green curry and a squash coming in my farmers box delivery today.
My wife makes the curry, here’s what she provided:
We usually serve with rice and naan, either store bought or using the serious eats grilled naan recipe Wookie posted above.
Thanks I’m gonna make this. Will report back.
i tried a green curry sauce from Trader Joe once and it was awful. if anyone wants a used half jar of bad curry that might be moldy by now let me know, it’s still in my fridge.
Babish granted my wish. I’m not sure I’d ever make any of this, but watching her mind at work is wild.
She wasted all the nitrous! There was a lot of good buzz in that canister, and she just sprayed it out into the room.
