Ramen is obviously a soup, but including it probably wouldn’t be fair because the best ones are so next level, it wouldn’t be much of a competition.

I’m happy to see someone mention pozole.

I love soups more than anything, but for some reason, don’t really like any of the Thai ones that much, which is unfortunate because I’m living in Bangkok now. The exception would be boat noodles:

I believe Costco has these and they are very good.

Cheddar cheese soup is a thing but brocolli cheddar is best version so don’t know you need it unless you trying to fill out brackets.

Being honest here but the top 50 would just be all asian dishes if you are counting pho/udon/ramen/congee/tom yam/tom kha/bún bò huế and an endless list of options as “soup”

Anyone who thinks the best french onion beats the best ramen hasn’t had great ramen.

Yeah Asian noodle soups are clearly way better than western soups, maybe they should get their own separate bracket to keep things fair.

I like this a lot, but I’d prefer it spicier and it’s never made that way. Also I can’t find the right condiment to get it there. Ramen spots often have a chili paste that would work, but they don’t have that exact thing at my beef noodle soup place. I’ve tried Sriracha, but that just doesn’t quite go with it, imo. Chili oil kind of works, but it’s not spicy enough per unit volume. I don’t need a quarter bowl of oil.

Do we have any Korean soups in this thing yet? There are probably a half-dozen legit contenders in that space.

Chili Crisp is also great for throwing in some spicy flavour & texture. Forget the expensive ones, Lao Gan Ma ftmfw. All my ramen-type stuff gets a tablespoon of that.

Well you’re going to the wrong type of places if you can’t find a spicy version! Any place that does Lanzhou beef noodles or any type of Sichuan cuisine will make it hot if you want or provide the chili oil/flakes to put in there.

The soup in the photo is actually more like a Taiwanese beef noodle soup though, which has a richer darker broth and isnt so spicy.

I’m not really a fan of chili crisp. Szechuan peppercorns weird me out a bit. I wish they made a version without them. That would be perfect.
