Related to the discussion of ghost kitchens upthread, this is coming soon to my neighborhood where there used to be a Panera

Now it will be a combination steakhouse/sushi bar/Mediterranean/BBQ/etc

I drove by a similar place this weekend in Toronto. I didn’t really get the point of advertising that you’re a ghost kitchen. The point of ghost kitchens is that you don’t go there and you never really have to know where they are.

I thought ghosts jumped out and scared people. At least that’s what I was lead to believe.

sounds similar to https://www.federalgalley.org/ in Pittsburgh. I remember before it opened this was sold as a restaurant incubator where chefs could try to make commercially successful concepts and brands before moving out to their own space

Yeah we have some of these foodhalls in Minneapolis and a few of the places that started there have opened up their own spots. One of the pizza spots has really taken off and received some national coverage. Each stall does most of its own cooking and food prep so I don’t think it’s the same as a ghost kitchen setup.

Would much rather just have street food/hawkers. Food delivery sucks.

We’ve had a few places down here where a restaurant closes, then something weird that looks like 2 or 3 restaurants in one opens within a month. They have tables inside but it seems mostly geared to take out.

Restaurants are expensive. I think a cool business model would just be like like a mall food court with a bunch of kitchens and then a bunch of tables in the middle.

Then people just rent the space w/o having to buy equipment and do all the legal paperwork.
