A friend of mine had an au pair who I think was Irish. Given my understanding of how that works, it’s fairly rigid and not unique to Ireland. There are au pairs from lots of different countries.
The waitstaff thing is definitely news to me. Can’t remember coming across one and an Irish accent is almost impossible to miss.
I would be in support a government funded initiative to increase the number of authentic French patisseries throughout the land.

I also saw a young French mademoiselle saying that they needed to lower the retirement age rather than raise it in order to free up more jobs for young people, which is economically illiterate but probably wins a bunch of votes.
