Chipotle is the best vegan fast food, imo. Try the sofritas burrito. If vegetarian, then there are a lot of options. In’n’Out has a good grilled cheese that you can add hot peppers for a little pizazz. Taco Bell has lots of options. Subway is kind of trash but it works in a pinch. And then there are the various BeyondBurger places. I haven’t really tried many of those, but I like this place called Nice Guys that has a good vegan bacon burger.
Thanks for all the tips to get started. A couple of the dinners I’ve made so far that have turned out excellent were tacos using sweet potatoes in place of meat and a mushroom and asparagus risotto.
Does anyone have a good dahl recipe?
Been vegetarian plus fish/seafood for 30+ years. Was full vegetarian until I first came to Japan, but the lack of vegetarian options caused me to eat a seafood meal there one day. It was so delicious I’ve never looked back. Zero desire to eat any land animal though.
Don’t know what kind of supplies you’ve got but real dahl just needs some fried jimbu and chilis covered in plain old simmered salted lentils.
Assuming you’re in the 99% of the world you can’t find jimbu, just fry up some chilis, maybe some cumin seeds if you want some earthiness, a few coriander seeds, star anise… basically any hard spices in oil for a minute to release their flavour. Then add clean rinsed lentils/peas/mung beans and a bunch of water and simmer until you get a consistency you like. If you’re not on a diet some crispy onions or shallots might be nice.

Just got around to trying this.
My son’s dinner today was goldfish crackers dipped in tahini. It quickly turned to fingers dipped in tahini. I stand by my cooking.
We haven’t gone full vegetarian but we don’t eat much meat. I don’t eat chicken anymore. It helps that I don’t like hamburgers. I actually prefer the fake burgers–but not even the ones that try to act like meat, those seem gross to me. I just get Prime Grillers (I think from Morningstar Farms?).
My main weaknesses are pizza toppings and breakfast meat, but we keep these to a few times a month so I don’t feel too bad (just the normal amount of bad).
One thing that really helped me was learning how to use a wok. It’s pretty easy. If you need some help, Kenji has a great book (The Wok). I just bake tofu in the oven, stir-fry some vegetables, add a sauce, and put over rice. Changing the sauce makes the dish seem a little different each time. There are a few tricks (like learning how to not have the tofu stick in the oven), but overall it’s pretty fast.
I’d love to cut out meat completely, maybe I can get there someday.
Been a fish-eating vegetarian (pescatarian?) since about the age of 20. Just lost my appetite for meat around that time.
More recently, have dropped dairy. The seafood in Japan is just too delicious for me to consider going full vegan at this point in my life. But could happen someday, and if it does, it’ll be primarily for health reasons rather than ethical concerns.
