Somebody upthread posted jerk chicken and reminded me how much I like it so I bought a jar of walkerswood, put the thighs in the smoker for a couple of hours and finished them on the grill. Fried plantains and coconut rice.
Gotta really plan for this meal though. The plantains took over a week to ripen.
My presentation ain’t winning any awards, but you can’t eat presentation.
Don’t know about your neck of the woods, but i discovered last month walmart has frozen maduros here in central fla. Soooo much easier and more consistent than buyng them fresh.
Thanks! I’ll keep an eye out for them but I doubt I’ll find them in Western Washington. We had a Mexican grocery store that used to carry ripe plantains but they haven’t had them for a while.
I bet you will. Look for the Goya stuff in the frozen food section.
Man, there’s an awesome jerk chicken place right near my office that was a killer lunch spot serving up just what you made. Haven’t had them in forever it feels like.

This post was a revelation for me, I didn’t know there was such a thing as fancy canned tuna. I looked around my Kroger and this was the classiest-looking tuna I could find. I might make a trip to Whole Foods and see if they have canned tuna for fancy lads.
Trolly, where are you located? If you’re near anywhere they catch tuna, you can probably get freshly jarred tuna which is really, really good. I’m in western Washington and they catch them off the coast.
I ordered some of this from the prior recommendation. Might try it out tomorrow.

If whole foods doesn’t have some type of gourmet canned tuna check the web, looks like there’s quite a few that you can get shipped.
I think they fish for tuna in Cleveland.
Mix it with some oil or something liquid and marinate for overnight or as long as you can. It’s a pretty thick paste and doesn’t spread easily.
I hate the new Kenji quarantine videos. I get actual motion sickness from the camera on his head nonsense, but I also want to watch 'Late Night Migas". It’s a struggle.
By the way, for people that do have access to fresh tuna steaks I highly recommend making a tuna salad sandwich from fresh tuna. If you lightly poach fresh tuna in oil with aromatics and then use that as the base for a standard tuna sandwich (mayo, lettuce, tomato, etc.) it’s extraordinary. And a budget buster lol.
Wow that sound fantastic and extravagant. When I do feel like shelling out for fresh tuna it’s damn hard to beat raw imo.
A while back I was watching a show (Casa de Papel) which is in Spanish and set in Spain.
One character insults another by saying something like he is a loser who lives alone eating tuna out of a can. Based on this thread, I’m not sure that as insulting as I had once thought.
