Made Gochujang Chicken and Pots. It was addicting.

Made about 8 pounds of bacon from pork belly, cured for 5 days or so, on the smoker for a few hours and then it is ready to cook. I added maple syrup and brown sugar to the cure and noticed that the sugars burned easily when it was fried. Next time I think I’ll leave those off it, flavor was excellent though.

Homemade pea soup from freshly-thawed peas. Simple, fortifying stuff for an Ohio winter.

So the wife gets together with her girlfriends and the kids like once a month. It being that time of year, they wanted latkes. I figured frying up some potatoes shouldn’t be so hard. The ladies said they were good but idk if they were just being kind to this gentile who cooked something new for the first time for them.

Look a bit thick to my eye, but I to am a member of the goyim, not that that has stopped me from joining in a few Chanukah celebrations.

Yeah I think they were a tad too thick. I tried to press them down with the metal slotted spoon as well as I could. As an FYI for folks- use caution when using your grater. I cut the shit out of my thumb when grating the potatoes for these. Grates are damn sharp.

I make about 200 latkes a year for my annual Hanukkah party. My bubbe will probably roll over in her grave, but I use a food processor to grate the potatoes and onion.

I added smoking a pastrami for the party and making Reubens a few years ago and it’s all everybody starts talking about come Hanukkah time.

Christmas menu finalized. I’ll be doing 48 hour venison shanks with some sort of demi glace sauce duxelles thing that I don’t really have a recipe for because fuck it, we’ll do it live.

Also a ham for the squeamish who won’t eat venison.

Sides of roasted root veg, Kenji’s creamed spinach, and pasta with asiago cream sauce and grilled squash and whatever else I decide to throw in there.

Other people are responsible for appetizers, salad, bread, and dessert.

Nice shanks. LOL @ anyone who touches your ham. We’re smoking a prime rib for Christmas eve. Christmas day I’m at the mercy of my aunt, who’s not half the cook I am.

Thinking about making this oddity for Christmas day brunch prior to going over there, though.

Well, after talking to my aunt and uncle, as of this evening, they had exactly one item on their whole Christmas day menu: London broil, roasted, and presumably overcooked and under-seasoned. My cousin had, unbeknownst to them, procured some white asparagus (not bad, actually). So, we’ll be bringing the Serious Eats crispy roasted potatoes, and some sort of salad, most likely bibb lettuce, radish, bell pepper, and homemade vinagrette, but maybe a beet salad or something.

Sukiyaki from last night. Best I have ever made, mainly on the back of using homemade beef stock.
