Cooking Good Food - Ramens of the day

I had the privilege to eat at Rodney Scott’s BBQ back when he was still cooking in a Quonset hut in Nowheresville, SC and the accommodations were the tailgate of my truck in a dirt parking lot. Top 5 lifetime food experience. I took the first bite and thought, “I can’t believe I drove all the way out here for some pulled po… oh. Oh my. Oh my gaaaaawd!!!”

I’m going to start cataloging the strange looks I get at BBQ places across the country when I ask them to hold the sauce on the pulled pork, oh, and do you have any vinegar and red pepper flakes?

People look at me like I have two heads but I’m telling you, there is NOTHING like it. Brings back childhood memories of summer and our Outer Banks vacations.

Just made the tastiest and simplest thing. Rice Krispie squares but gourmet. So good.

Standard recipe but use good European butter. Brown it. Toast Rice Krispies. Add a bit of vanilla. Sprinkle course salt on top.

It’s a fusion of a Alton brown and Clovis recipe.

Orange Glaze Salmon and Funky Snap Pea / Mushroom Stir Fry.

Yes but the smell of fish sauce not so much.

Worth it though.

Made some Beyond Meat burgers with sautéed mushroom and onion. My gf made the sweet potato fries. Caesar salad bagged.

Korean-ish marinated beef short ribs
Smoked for 3 hours, about to be braised for 3 more w marinade and beef stock

Had it made table side at Delmonico. Made a Kale Caesar from scratch a few years ago from a Blue Apron kit.

My turn for baked ziti. Had to use penne instead because there was no ziti to be found, but otherwise it came out perfecto. The butcher had some nice italian sausage that definitely made a difference.

It will also cover ~6 more meals, so I can relax on the cooking for a couple days :grin:

Cured and smoked 10 lb of pork belly to make bacon, i used the amazingribs recipe. Homemade Bacon That Beats Store Bought Smoked Bacon By A Mile

So far it’s been cubed and added to pasta, ate with eggs, ate by itself and used in BLTs, I’m going to get fat this week.
