I’ve used convection ovens a bunch for big hunks of meat and they’re great. Never used the microwave combination ones before but I suspect that’s what she has. They used to be something you’d occasionally find in commercial kitchens but like everything foodie related it’s probably diffused into the public sphere and gotten much cheaper.
Combo mIcrowave/convection ovens are reasonably common. My mother has a built-in one over her stove.
It’s boring, yes, but worst on earth? Nah. There are mass-market light lagers produced all over the place, many of which are worse than ours. But I give worst beer in the world award to the handful of ill-conceived hot chili pepper beers. Undrinkable.

Amazingly, this is probably not true. The mass produced beer out of China and India is actually worse IMO. But this is a pointless debate. There’s a ton of global beers under the line where I wouldn’t drink it except if someone held a gun on me.
If you have a stove, one alternative is to do a pot roast leg of lamb. If you have access to other sources of heat, you may have more options.
Yeah, I’m not very familiar with the capabilities of that microwave, but I’d do a stove top braise if I didn’t have a proper oven or a sous vide setup.
Yeah, feels like we’re piling on but I would be very surprised if the best available option is a microwave. Just thinking about it turns my brain into an angry Gordon Ramsay screaming bloody hell at me

In terms of entertainment a microwave’d leg will probably come out funnier so…
Maybe with the convection thing it will be ok? (I’ve never used one so hard to say.) Just make sure you if you try it to do as Wookie said and sear the roast in a pan before doing the microwave thing. Edit - he said stovetop braise and I assumed he meant sear.

I dont put mushrooms in my meat sauce but maybe I will next time for fun. I also recommend onion/celery/carrot mixed instead of bell peppers.
Do you add wine?
I sometimes use red wine especially when I do meatballs but I’m out now. I usually use the mushrooms that come wrapped in the produce section but Publix was out so I went with the canned stems and pieces and whatnot
Sounds pretty good nonetheless. Have fun. I made meat sauce last night, turned out pretty good. I used a mix of bacon and crumbled Italian sausage as the meat.
My ex likes to use sausage in the ziti, I got the recipe for that from her. Last time she took my leftover sauce and added a little sausage she had left over and it was delicious though very very meaty, I’d probably prefer one or the other
