sriracha-ftw- that SE Asian lentil soup was outstanding. Wife and I both loved it, little spicy for the kid but forget her. Kid wants to be a pescatarian, so I’ve been eating lots of lentils on off fish nights, this was great. 100% I’ll make it again, thank you.

Head up, man…

From the “things to do while on lockdown” (lol) thread:

Coconut oil for the pan
Onion - 1ea chopped
Garlic - 3ea minced
Knob o grated ginger
Curry power - 2T?
Red chili flakes - 1t
Lentils - 1 heaping cup, you choose the color
Crushed canned tomatoes - 15oz can
Veg stock - 1 box
Coconut milk - 1ea 14oz can
S+P til you’re happy
Enjoy w cilantro and lime wedges

Heat pan, add oil, add g/o/g, do cooking, add seasonings and lentils, stir to evenly distribute ingredients. Add tomatoes, stock, bring to simmer and continue to do cooking. Season liberally w s+p. Reduce heat to gentle blub blub blub and go for 1hr. Add coco milk and blub blub for 1 more hr. Taste and season, taste and season.

Breading 2: Electric Superflu

Better in pretty much every way. Fresh yeast that rises better so I can better adhere to the recipe rather than waiting around forever to get it to rise makes a big difference.

This recipe is pretty easy when done in a Kitchen Aid mixer, and it came out basically perfect the first time

No pizza stone, no problem. Colby jack instead of mozz due to these trying times. Peppers, onions, mushrooms, and sausage

Awesome. Wife uses a KitchenAid too. I think it’s on the menu next week too.

Yeah, I don’t think I’ve ever made pizza at home that wasn’t a take and bake, frozen, or at least premade dough, and those are all really disappointing, so I get pizza out almost exclusively. This dough was not hard to make at all, and I’ve never had a crust so good from a pizza I baked myself. Seems almost hard to screw up.

Beef bone broth

Tasted pretty good. Should turn to gel in the refrigerator. Also added 1/2 teaspoon of pink sea salt to each quart.

While I respect anyone making their own stock, which I think is one of the biggest revolutions in my own cooking in the last 5 years, I really, really hope you did something better with that bone marrow than just squander it in a stock.

I’ve tried it—not my thing. How do you eat it?

With a spoon? Spread on toasty bread?

I tried it on some french bread. Maybe I did it wrong.
