The bartenders at McCormick & Kuleto’s in SF supposedly made $150k when I worked there in the mid 90s. They were massively busy, got tips directly from customers, and also every waiter had to tip them out. They did work their asses off.

Nearly every other country in the world has managed to keep thriving restaurant businesses without our ass backwards tipping culture.
