Textiles have a certain amount of absorbency. Dyes use some of that up. White fabrics absorb more and you feel dryer longer.
eta: And before anyone says anything about wicking nonsense - great wick the sweat into your shoe and let it just get sweaty and stinky instead of socks that you wash every time.
