The price of knowing who wins on Election Day would include:
No early voting
No absentee voting
No mail in voting
No paper ballots
No paper trail
No recount possible
No hand count audit possible
No write ins (presumably)
In Arizona the law allows mailin ballots (which almost everyone uses) to be dropped off at a polling place on Election Day. Almost 290K people did this on Tuesday so the price of that convenience is that it takes a few days for these ballots to work through the pipeline.
All states take weeks to certify final counts. It’s just that the media is able to declare presumptive results much earlier in most cases because the races are not close.

Disagree with all of these! Early voting can be counted on the day of after polls close by feeding the ballots into the counters, mail in and absentee can arrive by election day, paper ballots are counted as received (this happens in my district in MA fwiw), and includes paper voting. Hand count audits with paper works. Write ins can be processed later if necessary. Electronic scanning of paper ballots within 24 hours is not difficult unless you are from California, Nevada or Arizona. Must be the fumes from the Pacific Ocean!
