Coffee Talk (and Tea)

I still have a monthly subscription from seycoffee.com, other than that I generally just bounce around. Dayglow was great for getting stuff from roasters outside the US where direct shipping would be prohibitive. Inside the US I’ve been buying from B&W, Sump, parlor, and others.

What are the european roasters that you’ve liked? Soni can look for them in Aus.

I really haven’t had enough from any one roaster to really form a solid opinion, Drop is probably the one I’ve had the most from and they have never disappointed. I’ve only hard a couple of bags from Nomad but they have all been top notch.

A few others that I’ve had sporadic but positive experiences with:

mame
Coffee collective
Cafe con Jiribila
Prolog
Sued Hang
Manhattan

I have a theory about some coffees being better suited for V60 than others which is why I decided to add a Kalita. I’m not gonna write a book about it right now but basically what you noticed about that Nomad Costa Rica is what I’ve found to be the best V60 coffees, specifically (1) grinds really well and (2) drains extremely fast. It’s like pouring the water through rocks as opposed to potting soil. My obervation has been that those tend to be low elevation (read: low density) coffees, and so I wasn’t surprised to see that your Nomad was only 1200 MASL. By comparison, that SWEET S01 is significantly higher at 1750 MASL. I don’t have a great explanation for this other than low density coffees produce fewer fines, but I suspect there’s more to it than that.

Looks like Lance is using WDT on pour overs now. I dunno if it makes sense or not but it’s easy enough to DIY it and try. I saw he’s using a vacuum cleaner to suck the chaff off the grinds too. That’s a bit more overkill.

usually when I get a lot of chaff there also happens to be a lot of static, and I just sort of “toss” the grinds a bit in the bin and the chaff tends to jump to the sides of the bin and stick there. vaccuming seems incredibly … precious? even for super nerds like us.

I’m noticing that for some beans lately, there is a really insane amount of chaff. like, I weigh 15 grams of beans, get 15 grams out of the grinder. Set the V60 on the scale and tare, pour the grinds in and only get like 14.6. That seems nuts.

Maybe it means we need to be first to market on a $299 Kickstarter coffee vacuum.

prima doesn’t have any hario untabbed filters anymore, are these just a relic of days gone by now?

was thinking about picking up the melodrip, but it seems like it would be pretty annoying to hold with one hand and pour with the other, maybe this does just as good?

Yeah I heard the factory making them was fully taken offline now that the new factories are up and running.

LM sent me those taste test strips and I finally got around to trying them. I’m sad to say I tasted almost nothing on all of them. There was a tiny hint of unpleasant flavor on one but I might be imagining things. I’ll probably give it another go against soon when my palate feels especially sharp to be sure.

put this on my amazon wishlist and got it in my secret santa with my cousins:

it’s… fine. The coffee that came out was completely indistinguishable from the same beans in the standard size 2 plastic v60. It looks nice and feels nice pouring from it. I’m not sure I’m going to keep using it, though.

  1. the cone itself is a tiny bit smaller than the “real” v60 cone, so the filter sticks up significantly more over the rim. this isn’t really a huge problem but makes rinsing the filter with hot tap water a little less convenient (in Hoffman’s last “really for real this time I’ve really got it the best v60 technique for sure this time” video, he mentions rinsing the filter with hot tap water and if you just set the cone in the sink, the plastic ring at the bottom will create a pretty decent seal, keeping the hot water in the cone which is way better for preheating the cone). With this cone, once the water fills up above the rim, the filter has so much extra flapping around that the filter sort of collapses inward.

  2. the bottom of the cone is different enough to make this rinse/preheat method awkward. It will sit upright just fine, but it has fins that keep it upright instead of the disc/ring so it doesn’t really seal.

  3. because it doesn’t have the ring, I easily can’t sit it on top of a regular mug, which I usually do after I brewing to catch the straggler drops (after I finish the “real” cup I’ll taste these just for bitterness comparisons). It will sort of wedge inside some mugs but it’s not ideal.

  4. the decanter is a lot bigger than I imagined, it overhangs the myWeigh scale (not a huge issue)

  5. the decanter is so big that I can’t set the regular v60 cone on top of it, the bottom ring fits inside the lip of the glass (also not really a huge problem).

Anyway, I also had the immersion v60 on my list, I guess I’ll just buy that for myself and try it out:

Got Death Wish Coffee K-Cups for Christmas.

They said it was supposed to be super strong but I’ve honestly had stronger. To me it didn’t taste bad. I expected it to be super bitter due to the advertising but it was just generic, not that strong coffee. Didn’t have much of an aroma either. Kinda blah.

Good thing it was a Christmas gift

Friends over for christmas yesterday.

4 people asked for coffee.

3 of 4 got the beans and method I use for Mrs Rugby. Who seems to enjoy the taste of burnt dark roast coffee. Shrug.

One of the 4 is a coffee nerd who used to work as a barista. She got a cup from the beans I drink.

Coffee gods were kind. I solved the bag literally first cup a few days ago, and it had been consistent over 3 days. So fully confident she got an EXCELLENT cup of coffee. Almost certainly better than anything you would get as a pourover from a fancy place.

She seemed happy.

As an aside. Proud Mary has a three tier classification for their coffee, which I like.

Mild. Curious. Wild.

oh one other hyper excellent xmas present, from my son:

the rikshi are not just printed on the mug, they’re like etched into the ceramic. It’s pretty sweet, it just barely holds ~230ml which is small for a coffee mug bug perfect for me since I usually pour 15g/250ml which after the grinds absorb whatever water ends up with about 210ml output.

I think I posted this before but the OG filters are no longer in production. I ordered a case of 01 size from the Hario USA site a while back, but once they are gone they are gone. The Cafec “medium roast” filters should be similar in terms of speed.

Looks like they are still showing 40 ct boxed. I think they are the originals but not 100% sure. Might want to email and ask.

There are definitely more taste genes than TASR or whatever it is these test, but the fact that my mom was a super taster means I almost certainly have one copy. It was very faint for me too, but I’ve served my parents some of these coffee before and neither reacted differently. It was just sort of like “hmm that’s interesting” and they go back to their Maxwell House.

Got a “Bearded Funcle” mug which celebrates the fact that I will become exactly that in a few weeks.

I don’t really have a review on the Kalita yet other than I got the 155 and it’s tiny, like considerably smaller than I was expecting. I would get the 185 if I bought it again, even for small doses. It just doesn’t hold much water at all and forces you into a high number of pours. There also isn’t enough area to really do any kind of pour technique. The paper is thicker and rougher than I was expecting. Oh, also the metal gets hot as fuck even though the water isn’t really touching the side walls, so it’s acting as a big heat sink. The larger one should have more of this effect I suppose.
